In our splendid Tuscany hills, where seasons gives rhythm to time, I produce extra-virgin olive oil from Monti Pisani (the hills that surround Pisa), in full respect of nature, carrying on a centennial tradition.
The organic oil made by Fattoria Delle Sedie, sincere and genuine, is made by 4 thousand plant distributed on a 11 hectares area.
Harvesting olives is held by our workers with dedication, focus and attention to detail, by hand or with the help of small machines, called "shakers".
Olive-pressing, made "a freddo" (with no warming up operations), is made between 24 hours after harvest. No further processing techniques are added in order to guarantee the oil's authenticity.
